Easy Caramel Popcorn Recipes

You will see that most of these recipes have the same (or almost the same) ingredients: butter, brown sugar, corn syrup, salt, vanilla, and baking soda in some variation or another.

Quick and Easy Caramel Popcorn #1


·         11 Cups popped corn (1 2.9 ounce popped bag of microwave popcorn)

·         ¾ cup butter or margarine

·         ¾ cup firmly packed light brown sugar


1.   Preheat oven to 350 degrees F. Spray 15 X 10 inch jelly-roll pan with cooking spray.

2.   Combine butter and brown sugar in 8-cup glass bowl.

3.   Microwave on HIGH for 4 minutes, stirring once to thoroughly blend butter and sugar, or until sugar is dissolved.

4.   Drizzle over popped corn

5.   Using 2 spatulas, carefully toss to coat evenly.

6.   Spread out on prepared jelly-roll pan.

7.   Bake 10 minutes, stirring halfway through baking, to evenly distribute caramel.

8.   Toss again after baking.

9.   Let cool 5 minutes on baking sheet.

10. Store leftovers in air-tight container.

Fast and Easy Caramel Popcorn #2


·         1 cup of popped popcorn (or 2 3½ ounce bags of microwave popcorn popped)

·         ½ cup margarine

·         ¼ cup light corn syrup

·         1 cup brown sugar

·         1 teaspoon baking soda

·         1 brown paper bag


1.   Place popped corn in the brown paper bag.

2.   Melt margarine, brown sugar, and syrup in microwave on high for 5 min stirring once every 1/2 minute

3.   Stir in baking soda, mixture will foam!

4.   Pour over popcorn in bag and shake well.

5.   Place in microwave on high for 1 minute

6.   Shake again, heat for one more minute.

7.   Shake, pour into bowl to cool and then enjoy!

·         3 quarts of popped popcorn

·         1 cup firmly packed brown sugar

·         ½ cup Karo corn syrup

·         ½ cup butter

·         ½ tsp. salt

·         ½ tsp. baking soda


1.   Combine butter, salt, Karo syrup, and brown sugar in a saucepan.

2.   Stir constantly until mixture starts to boil.

3.   Let mixture boil without stirring for 5 minutes.

4.   Remove from heat.

5.   Add baking soda and stir.

6.   Pour over popped corn.

Easy Caramel Popcorn #4


· 3 quarts popped popcorn

· 3 cups mixed unsalted nuts

· 1 cup packed brown sugar

· ½ cup light or dark corn syrup

· ½ cup butter

· ½ teaspoon salt

· ½ teaspoon vanilla

· ½ teaspoon baking soda


1.   Preheat oven to 250 degrees

2.   Combine the popcorn and nuts in a large, shallow pan

3.   Place pan in oven while making glaze

4.   In a heavy 2-quart saucepan stir sugar, corn syrup, butter, and salt

5.   Stirring constantly, bring to a boil over medium heat

6.   Boil 5 minutes without stirring

7.   Remove from heat and stir in vanilla and baking soda

8.   Pour over warm popcorn and nuts, and stir until well coated

9.   Bake in 250 degree oven, stirring occasionally for 1 hour

10. Cool; break apart.

11. Store in tightly covered container.

Easy Caramel Popcorn #5

  • nonstick cooking spray
  • 3 tablespoons canola oil
  • ¼ cup popcorn kernels
  • 6 tablespoons unsalted butter, cut into pieces
  • 1/3 cup packed light brown sugar
  • 3 tablespoons light corn syrup
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon kosher salt


1.   Heat oven to 300° F. Spray a rimmed baking sheet with the cooking spray.

2.   Heat the oil in a large saucepan over medium heat.

3.   Add the popcorn kernels, cover, and cook, shaking the saucepan constantly once the kernels begin to pop, until there is a 2- to 3-second interval between pops, 5 to 7 minutes.

4.   Transfer to a large bowl.

5.   In a medium saucepan, combine the butter, sugar, and corn syrup.

6.   Cook over medium heat, stirring frequently, until the mixture bubbles and lightens in color, 3 to 5 minutes.

7.   Stir in the vanilla and salt.

8.   Pour over the cooked popcorn and, with a rubber spatula, toss to coat.

9.   Spread the popcorn mixture on the prepared baking sheet and bake, tossing once, until deep amber, 30 to 35 minutes.

10.Remove from oven, toss, and let cool on the baking sheet. (The popcorn will crisp as it cools.)

·         1/2 cup light corn syrup

1.   Preheat oven to 250 degrees F.

2.   Place popcorn in well-greased pan.

3.   In large heavy saucepan, melt butter; stir in sugar, syrup and salt. Bring to a boil.

4.   Boil for 5 minutes over medium heat without stirring.

5.   Remove from heat and stir in vanilla and soda.

6.   Pour syrup over popcorn and stir well.

7.   Bake for 1 hour, stirring every 15 minutes.

8.   When cool separate kernels, store tightly covered.

Easy Caramel Popcorn #7


·         1/4 cup vegetable oil

·         1/2 cup popcorn (uncooked)

·         1/2 cup butter

·         1/4 cup light corn syrup

·         1 cup brown sugar

·         1 teaspoon vanilla

·         1 teaspoon fine salt

·         1 teaspoon baking soda


1.   Line a baking sheet with wax paper

2.   Pop popcorn

3.   Place popcorn into a large bowl

4.   For the Caramel Sauce:

       a.   In a medium saucepan over medium heat, add the butter

       b.   Once the butter has melted, add the popcorn, syrup, and brown sugar

       c.   Stir to combine

       d.   Bring to a boil and simmer for 3 to 4 minutes

       e.   Remove from heat

       f.    Stir in the vanilla, fine salt and baking soda

       g.   Immediately pour on popcorn.

5.   Stir popcorn until all popcorn is evenly coated

6. Allow to cool before eating
